Prepare the Gremolata

In a small bowl, mix together lemon zest, chopped parsley, and lemon juice. Set aside.

Cook the Couscous and Orzo

In a saucepan, bring 1.5 cups of water to a boil. Add couscous and orzo, cover, and remove from heat. Let sit for 5 minutes. Fluff with a fork.

Sear the Halibut

Season halibut fillets with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add halibut fillets and cook for about 4-5 minutes on each side or until golden brown and cooked through.

Sauté the Vegetables

In the same skillet, add minced garlic and cherry tomatoes. Cook for 2-3 minutes until tomatoes start to soften. Add baby spinach and cook until wilted.

Assembly

Plate the Dish

On each plate, serve a portion of couscous and orzo, topped with sautéed vegetables and a halibut fillet. Drizzle with lemon gremolata before serving.
