Preparation

Preparing the Calamari

1. Coat the Calamari

In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Dredge the calamari rings in the mixture until fully coated.

2. Fry the Calamari

In a large pot, heat the vegetable oil to 350°F (175°C). Fry the coated calamari in batches for 2-3 minutes or until golden brown. Remove and drain on paper towels.

Cooking the Haricot Verts

3. Sauté the Haricot Verts

In a skillet, heat olive oil over medium heat. Add the haricot verts and sauté for 5-7 minutes until tender-crisp. Season with salt and black pepper to taste.

Making the Curry Aioli

4. Prepare the Aioli

In a bowl, mix the mayonnaise, curry powder, minced garlic, lemon juice, and salt until well combined. Adjust seasoning to taste.
