Preparation and Baking

    Prepare the Dough

    In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy. In a large bowl, mix the flour and salt. Make a well in the center, add the yeast mixture and olive oil, and stir until combined. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover, and let it rise in a warm area for about 1 hour or until doubled in size.

    Prepare the Sauce

    While the dough is rising, prepare the pizza sauce by seasoning the canned crushed tomatoes with salt and black pepper to taste. Set aside.

    Preheat the Oven

    Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.

    Assemble the Pizza

    Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer the dough to a baking sheet or a pizza peel if using a pizza stone. Spread the prepared tomato sauce over the dough, leaving a small border for the crust. Tear the fresh mozzarella into pieces and distribute evenly over the sauce. Add fresh basil leaves on top.

    Bake the pizza in the preheated oven for 10-12 minutes, or until the crust is golden and the cheese is bubbling. Remove from the oven and let it cool for a couple of minutes before slicing.
