    Make the Pasta Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

    Prepare the Cheese Filling

    In a separate bowl, combine the ricotta, mozzarella, parmesan, black pepper, and additional salt to taste. Mix until well combined.

    Roll Out the Dough

    Divide the rested dough into 4 pieces. Roll out each piece into thin sheets, about 1/8 inch thick. Cut into rectangles approximately 4 inches wide and 6 inches long.

    Stuff the Manicotti

    Preheat the oven to 375°F (190°C). Take each pasta rectangle and place about 2 tablespoons of the cheese filling at one end. Roll the pasta around the filling to form a tube. Place the stuffed manicotti seam-side down in a greased baking dish.

    Add Marinara Sauce

    Pour the marinara sauce over the stuffed manicotti, ensuring they are well coated. Sprinkle additional mozzarella cheese on top if desired.

    Bake

    Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
