Preparation of Bruschetta
Prepare the Tomato Mixture
In a large mixing bowl, combine the fresh tomatoes, minced garlic, chopped parsley, and chopped basil. Add the grated Parmigiano Reggiano cheese, extra-virgin olive oil, salt, and black pepper. Stir well to combine all the ingredients.
Toast the Bread
Slice Italian bread into 1/2-inch thick slices. Toast the slices in a preheated oven at 400°F (200°C) for about 5-7 minutes or until golden brown and crispy.
Assemble the Bruschetta
Once the bread is toasted, remove it from the oven. Spoon the tomato mixture generously onto each slice of toasted bread.
Serve
Serve immediately while the bread is warm, drizzled with additional extra-virgin olive oil if desired.
