Prepare the Potatoes

Boil the Russet potatoes in salted water until fork-tender, about 20-25 minutes. Drain and let cool slightly.

Make the Dough

Peel the potatoes and mash them in a large bowl. Add ricotta cheese, egg, salt, and black pepper, mixing until combined. Gradually add flour, mixing until a soft dough forms.

Shape the Gnocchi

On a floured surface, divide the dough into sections and roll each into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece.

Cook the Gnocchi

Bring a large pot of salted water to a boil. Drop the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Assemble and Bake

Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce, add the cooked gnocchi, top with remaining marinara sauce, and sprinkle with mozzarella and parmesan cheese.

Final Bake

Bake the dish in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden. Garnish with fresh basil if desired.
