    Prepare the Eggplant

    Slice the eggplant into thin rounds. Sprinkle with salt and let it sit for about 30 minutes to draw out moisture. Rinse and pat dry.

    Heat olive oil in a grill pan over medium-high heat. Grill the eggplant slices for about 3-4 minutes on each side until tender and charred. Remove from heat and allow to cool.
