Preparation Instructions
1. Prepare the Kale
Wash and dry the kale leaves, then remove the stems. Tear or chop the leaves into bite-sized pieces and place them in a large salad bowl.
2. Julienne the Carrots
Peel the carrots and julienne them into thin strips. Add them to the bowl with the kale.
3. Add Roasted Beets
If using pre-roasted beets, slice them into thin segments. If roasting your own, roast them until tender, cool, and then slice. Add them to the salad bowl.
4. Add Goat Cheese
Crumble the goat cheese over the salad mixture.
5. Make the Vinaigrette
In a small bowl, whisk together the olive oil, orange juice, orange zest, honey, salt, and black pepper until well combined.
6. Dress the Salad
Pour the vinaigrette over the salad and toss gently to combine. Adjust seasoning if necessary.
7. Serve
Serve immediately, or let it sit for 10 minutes to allow the flavors to meld.
