Fish Preparation

    Prepare the Walleye

    Pat the walleye fillets dry with paper towels to remove excess moisture.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs. In a third bowl, combine cornmeal, salt, black pepper, and cayenne pepper.

    Bread the Fish

    Dredge each walleye fillet in the flour, shaking off excess. Dip in the egg mixture, then coat in the cornmeal mixture to ensure an even coating.

    Heat Oil

    In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Carefully add the breaded walleye fillets to the hot oil, frying for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Sandwich Assembly

    Prepare Vegetables

    Slice the red onion into thin rings and the tomato into thick slices.

    Build the Sandwich

    On the bottom slice of focaccia bread, spread 2 tablespoons of Caesar dressing. Layer with a leaf of lettuce, a slice of fried walleye, 2 slices of mozzarella cheese, a few rings of red onion, and a slice of tomato.

    Add Dressings

    Spread 2 tablespoons of 1000 Island dressing on the top slice of focaccia and place it on top of the sandwich.

    Serve

    Cut the sandwich in half if desired and serve immediately while hot.
