Prepare the Calamari

1. Clean the Calamari

Rinse the fresh calamari under cold water and pat dry with paper towels. Remove the head and innards, and slice the body into rings.

2. Season the Calamari

In a bowl, combine salt and black pepper. Toss the calamari rings with the seasoning mixture to coat evenly.

3. Dredge in Flour

Place the all-purpose flour in a shallow dish. Dredge the seasoned calamari rings in the flour, shaking off any excess.

Make the Basil Marinade

4. Blend Ingredients

In a blender or food processor, combine fresh basil leaves, garlic cloves, lemon juice, olive oil, red pepper flakes, and salt. Blend until smooth.

5. Marinate Calamari

Toss the dredged calamari rings in the basil marinade until well coated. Let them marinate for at least 30 minutes in the refrigerator.

Cook the Calamari

6. Heat the Oil

In a large skillet, heat the olive oil over medium-high heat until shimmering.

7. Fry the Calamari

Add the marinated calamari rings to the hot oil in a single layer. Fry them for about 2-3 minutes on each side or until golden brown and crispy.

8. Drain Excess Oil

Once cooked, remove the calamari from the skillet and place them on a plate lined with paper towels to drain excess oil.
