Cook the Wild Rice
In a medium saucepan, combine wild rice and water. Bring to a boil, then reduce heat and simmer covered for 45 minutes, until rice is tender. Drain excess water and let it cool.

Prepare the Dough
In a large mixing bowl, combine flour, yeast, sugar, salt, and olive oil. Add the cooled wild rice and cranberry juice. Mix until a dough forms.

Knead the Dough
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.

Let the Dough Rise
Place the kneaded dough into a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape and Bake the Bread
Preheat your oven to 375°F (190°C). Once risen, punch down the dough and shape it into a loaf. Place it in a greased loaf pan and let it rise for another 30 minutes. Bake for 30-35 minutes, or until golden brown. Allow to cool before slicing.

Spread the Mayonnaise
Once the bread is cooled and sliced, spread a thin layer of mayonnaise on one side of each slice.

Layer the Fillings
On one slice of the bread, layer the sliced turkey breast, followed by the swiss cheese, lettuce leaves, thinly sliced red onion, and alfalfa sprouts.

Complete the Sandwich
Top with another slice of bread, mayonnaise side down. Press gently and cut the sandwich in half.
