Method

Prepare the Filling

    Cook the Meat

    In a skillet, heat the olive oil over medium heat. Add the ground beef and veal, cooking until browned. Drain excess fat.

    Add Spinach and Seasoning

    Mix in the chopped spinach, salt, black pepper, and nutmeg. Cook until the spinach wilts. Remove from heat and let it cool.

Make the Pasta Dough

    Prepare the Dough

    In a large bowl, combine the flour and salt. Make a well in the center, add the eggs, and mix until a dough forms.

    Knead and Rest

    Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Assemble the Tortellini

    Roll out the Dough

    Divide the dough into four portions. Roll out one portion to about 1mm thick. Keep the rest covered.

    Cut and Fill

    Cut the dough into squares (about 5cm x 5cm). Place a teaspoon of the meat mixture in the center of each square. Fold the square into a triangle and press edges tightly.

    Shape the Tortellini

    Bring the two corners of the triangle together to form a ring. Press to seal. Repeat with remaining dough and filling.

Prepare the Cream Sauce

    Sauté the Mushrooms and Garlic

    In a large pan, heat olive oil over medium heat. Add the sliced mushrooms and minced garlic, sautéing until mushrooms are golden.

    Add Cream and Prosciutto

    Stir in the heavy cream, chopped prosciutto, salt, and black pepper. Simmer for 5 minutes until slightly thickened.

    Incorporate Mozzarella

    Add shredded mozzarella to the sauce, stirring until melted and smooth.

Cook and Serve

    Cook the Tortellini

    In a large pot of boiling salted water, cook the tortellini for about 4-5 minutes, or until they float to the surface.

    Combine with Sauce

    Drain the tortellini and gently mix them with the cream sauce until well coated.

    Serve

    Plate the tortellini and garnish with grated Parmesan cheese and chopped parsley.
