Ice Cream Base Preparation

    Heat the Dairy

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until just simmering, stirring occasionally to dissolve the sugar.

    Whisk Egg Yolks

    In a bowl, whisk together the egg yolks and salt until well combined.

    Temper the Egg Yolks

    Slowly ladle about a cup of the hot cream mixture into the egg yolks, whisking constantly to temper them. Then, pour the egg yolk mixture back into the saucepan with the remaining cream mixture.

    Cook the Mixture

    Continue to cook the mixture over medium heat, stirring constantly, until it thickens slightly and coats the back of a spoon (about 5-7 minutes). Do not boil.
