Salad Preparation

Prepare the Spinach
Wash the fresh spinach leaves thoroughly under cold running water. Pat dry with a clean kitchen towel or use a salad spinner to remove excess moisture.

Cut the Oranges
Peel the oranges and segment them by cutting between the membranes to release the segments. Remove any seeds and set aside.

Add Pineapple
If using fresh pineapple, peel and cut it into bite-sized chunks. If using canned, drain and rinse the pineapple chunks.

Slice the Red Onion
Peel the red onion and slice it thinly. You can soak the slices in cold water for 10 minutes to reduce the sharpness if desired.

Combine Salad Ingredients
In a large salad bowl, combine the spinach, orange segments, pineapple chunks, sliced red onion, sliced almonds, and diced mozzarella cheese. Toss gently to mix.

Prepare the Dressing
In a blender or food processor, combine the fresh raspberries, olive oil, honey, apple cider vinegar, salt, and black pepper. Blend until smooth.

Taste and Adjust
Taste the dressing and adjust the seasoning with more salt or honey if needed. If the dressing is too thick, add a little water to reach the desired consistency.
Serving

Dress the Salad
Drizzle the raspberry dressing over the salad just before serving. Toss gently to coat all ingredients evenly.

Serve the salad immediately as a fresh and vibrant side dish or light meal.
