Pasta

Method

Prepare the Pasta

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, reserve 1 cup of pasta water and drain the rest.

Make the Sauce

  1. 2

    Sauté Garlic

In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Do not let it brown.

  2. 3

    Add Tomatoes and Olives

Stir in the diced fresh tomatoes and cook for about 5 minutes until they start to soften. Then, add the sliced kalamata olives and rinsed capers, and stir to combine.

  3. 4

    Incorporate Marinara and Wine

Pour in the marinara sauce and white wine (if using), stirring well. Allow the sauce to simmer for another 5-7 minutes, letting the flavors meld together. Season with black pepper and red pepper flakes if desired.

Combine and Serve

  1. 5

    Combine Pasta and Sauce

Add the drained spaghetti to the sauce in the skillet. Toss everything together, adding reserved pasta water a little at a time until you reach your desired consistency.

  2. 6

    Garnish and Serve

Serve the spaghetti alla puttanesca hot, garnished with chopped fresh parsley. Enjoy your dish!
