    Prepare the fruit

    If using raspberries, wash them thoroughly under cold water and remove any stems. For mango, peel the skin, remove the pit, and chop the flesh into small pieces.

    Make the syrup

    In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium heat while stirring until the sugar is completely dissolved. Remove from heat and allow to cool.

    Blend the base

    In a blender, combine the prepared raspberries (or mango), the cooled syrup, and 2 tablespoons of lemon juice. Blend until smooth.

Freezing

    Chill the mixture

    Pour the blended mixture into a shallow dish or ice cream maker. If using a shallow dish, cover it with plastic wrap and place it in the freezer.

    Stir periodically

    Every 30 minutes, stir the mixture with a fork to break up any ice crystals, until the sorbet is fully frozen and has a light, fluffy texture (approximately 3-4 hours).
