Preparation

  1. 1

    Prepare the Vegetables

Clean and slice the mushrooms, dice the zucchini, chop the tomatoes, and finely chop the onion and garlic.

Cooking

  1. 2

    Sauté the Vegetables

In a large skillet, heat 3 tablespoons of virgin olive oil over medium heat. Add the chopped onions and sauté for about 2-3 minutes until they are translucent.

  2. 3

    Add Mushrooms and Zucchini

Add the sliced mushrooms and diced zucchini to the skillet. Cook for an additional 5-7 minutes until the mushrooms are browned and the zucchini is tender.

  3. 4

    Incorporate Garlic and Tomatoes

Stir in the minced garlic and chopped tomatoes. Cook for another 3-4 minutes, allowing the tomatoes to soften.

  4. 5

    Add Marinara Sauce

Pour in 1 cup of marinara sauce, stir well, and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
