    Prepare Lavender Infusion

    In a small pot, bring 1 cup of water to a boil. Add the dried lavender buds and reduce heat to low. Let it simmer for 5 minutes, then remove from heat and allow to steep for an additional 10 minutes. Strain the mixture to remove the lavender buds and let it cool.

    Mix the Base

    In a cocktail shaker, combine 2 oz of Empress Gin, 1 oz of the cooled lavender infusion, 1 oz of fresh lemon juice, and 1 tbsp of agave syrup. Fill the shaker with ice cubes and shake vigorously for about 15 seconds.

    Assemble the Spritzer

    In a tall glass, fill it halfway with ice cubes. Strain the gin mixture over the ice. Top with 4 oz of seltzer water to add fizz.

    Garnish and Serve
