Prepare the Pineapple
Cut the fresh pineapple into small chunks, about 1 inch in size. Measure 2 cups of the pineapple chunks and set aside.

Infuse the Jalapeño
Slice the jalapeño in half lengthwise. Remove the seeds if you prefer less heat. Place the jalapeño halves in a small saucepan with 1 cup of water. Bring to a simmer and let it cook for about 5 minutes to infuse the flavor.

Make the Simple Syrup
In a separate small saucepan, combine 1 cup of sugar and 1 cup of water. Heat over medium heat, stirring until the sugar has dissolved. Remove from heat and let cool.

Combine Ingredients
In a large pitcher, combine the 2 cups of pineapple chunks, the strained jalapeño infusion (remove jalapeño pieces), and 1 tablespoon of simple syrup. Stir well to mix.

Pour the spicy pineapple soda into glasses. Garnish with lime wedges and fresh mint leaves. Serve immediately and enjoy your refreshing drink!
