Method

Preparation of Jalapeño Infused Pineapple

  1. 1

    Infuse the Pineapple

Slice fresh pineapple into chunks and place them in a jar. Add sliced jalapeños (adjust the quantity based on desired spice level) to the jar. Pour enough tequila over the pineapple and jalapeños to cover them completely. Seal the jar and let it infuse in the refrigerator for at least 24 hours.

Mixing the Margarita

  1. 2

    Combine Ingredients

In a cocktail shaker, combine 2 oz of tequila, 1 cup of jalapeño infused pineapple (with some juice), 1 oz of agave syrup, and 1 oz of fresh lime juice.

  2. 3

    Shake the Mixture

Fill the cocktail shaker with ice and shake vigorously for about 15-20 seconds until the mixture is well chilled.

  3. 4

    Prepare the Glass

On a small plate, spread 1 tsp of Tajín seasoning. Run a lime wedge around the rim of a chilled glass, then dip the rim into the Tajín to coat it.

  4. 5

    Strain and Serve

Strain the margarita mixture into the prepared glass filled with ice. Garnish with a lime wedge and a slice of pineapple.
