Prepare the Gnocchi
In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the top, usually about 2-3 minutes. Drain and set aside.

Chop Vegetables
While gnocchi is cooking, rinse the cherry tomatoes and cut them in half. Wash the spinach thoroughly and chop coarsely. Mince the garlic cloves.

Finely grate the Parmesan cheese and set aside for later use.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the cooked gnocchi and season with salt and black pepper. Sear for about 5-7 minutes, stirring occasionally, until the gnocchi are golden brown and crispy on the outside.

Lower the heat to medium and add the minced garlic and halved cherry tomatoes to the skillet. Sauté for 2-3 minutes until the tomatoes start to soften.
