Chop the Vegetables
Wash and chop the broccoli into bite-sized florets. Slice the zucchini into half-moons. Dice the onion and tomato. Mince the garlic cloves. Slice the mushrooms.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for 2-3 minutes until they begin to soften.

Add Broccoli and Zucchini
Add the broccoli florets and zucchini slices to the skillet. Sauté for an additional 4-5 minutes, stirring occasionally.

Finish with Tomato
Stir in the diced tomato and cook for 2 more minutes until the tomato is heated through.
Topping

Add Cheese and Melting
Sprinkle the shredded mozzarella cheese evenly over the sautéed vegetables. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes on low heat.

Once the cheese is melted, remove from heat and serve hot as a side dish or over pasta.
