    Prepare the Ingredients

    Begin by trimming and slicing the chicken, pork, or veal into thin pieces. Clean the mushrooms and slice them. Mince the garlic and finely chop the shallots.

    Sauté the Meats

    Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the meat of your choice and season with salt and pepper. Sauté until browned and cooked through, about 5-7 minutes. Remove the meat from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil and butter. Add the shallots and garlic, and sauté for 2-3 minutes until fragrant. Then add the sliced mushrooms and continue to cook until they are tender and browned, about 5 minutes.

    Deglaze the Pan

    Pour in the dry Marsala wine and chicken broth, scraping the bottom of the pan to release any browned bits. Bring to a simmer and reduce the sauce slightly, about 3-5 minutes.

    Combine and Serve

    Return the meat to the skillet and stir to coat in the sauce. Allow everything to heat through for another 2 minutes. Sprinkle with chopped fresh parsley before serving.
