Make Potato Puree
Once cooked, drain the potatoes and let them cool slightly. Peel the skins and mash the potatoes in a large mixing bowl until smooth.
- 3
- 4
Shape the Gnocchi
On a floured surface, divide the dough into sections. Roll each section into a long rope about 1/2 inch thick, then cut into 1-inch pieces. Optionally, roll each piece over a fork to create ridges.
- 5
Cook the Gnocchi
Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
For the Pomodoro Sauce
- 6
Sauté the Garlic
In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.
- 7
Add the Marinara Sauce
Pour in the marinara sauce and stir to combine. Bring to a simmer, then reduce heat to low and let it cook for about 5-10 minutes.
- 8
Season the Sauce
Add salt and black pepper to taste. Stir in the chopped basil, reserving a small amount for garnish.
- 9
Combine Gnocchi and Sauce
Add the cooked gnocchi to the sauce in the skillet, tossing gently to coat the gnocchi evenly with the sauce. Heat together for another 2-3 minutes.
- 10
Serve
Plate the gnocchi pomodoro and garnish with remaining basil. Enjoy your homemade dish!
