Base Preparation

    Prepare the Base Mixture

    In a medium saucepan, combine whole milk, heavy cream, and granulated sugar. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks until they are light and frothy.

    Temper the Egg Yolks

    Slowly pour a small amount of the hot milk mixture into the egg yolks while whisking continuously. This will temper the yolks and prevent them from scrambling.

    Combine Mixtures

    Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

    Add Vanilla

    Remove from heat and stir in vanilla extract. Let the mixture cool to room temperature.

Banana Dulce De Leche Preparation

    Prepare Bananas

    Peel and mash the ripe bananas in a bowl until smooth.

    Combine with Dulce De Leche

    Mix the mashed bananas with dulce de leche until well combined. Set aside.

Fruitta De Busca Preparation

    Prepare Peaches

    Peel, pit, and chop the peaches into small pieces.

    Make Peach Mixture

    In a bowl, combine the chopped peaches with sugar and lemon juice. Let sit for 15 minutes to macerate.

Final Assembly

    Combine All Components

    In a large bowl, combine the cooled base mixture with the banana dulce de leche and the macerated peach mixture. Stir until well combined.

    Chill Mixture

    Refrigerate the combined mixture for at least 2 hours, or until thoroughly chilled.

    Churn Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a smooth and creamy consistency.

    Freeze Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours before serving to firm up.
