    Prepare the Chicken

    Shred the cooked chicken breast into bite-sized pieces and place it in a bowl.

    Chop Vegetables

    Slice the bell pepper and red onion into thin strips and set aside.

    Mix Seasoning

    In a small bowl, combine cumin, chili powder, salt, and black pepper. Mix well.

    Sauté Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell pepper and red onion, and sauté for about 2-3 minutes until they start to soften.

    Add the shredded chicken to the skillet along with the seasoning mix. Stir well and cook for another 3-4 minutes until everything is heated through.

    In a separate skillet, heat another tablespoon of olive oil over medium heat. Place one tortilla in the skillet and sprinkle half of the shredded cheese on one half of the tortilla. Add half of the chicken and vegetable mixture on top of the cheese, then fold the tortilla over.

    Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
