Dough Preparation

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, then crack the eggs into the well. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead it for about 5-7 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Filling

    In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg yolk, fresh basil, salt, and black pepper. Mix until well combined.

Ravioli Assembly

    Roll Out the Dough

    After the dough has rested, divide it into four equal pieces. Roll out one piece at a time into a thin sheet, about 1/16-inch thick. Keep the remaining dough covered to prevent drying.

    Fill the Ravioli

    Place small spoonfuls (about 1 teaspoon) of the filling mixture on one half of the rolled-out dough, spacing them about 2 inches apart. Fold the other half of the dough over the filling and press down around each mound to seal.

    Cut the Ravioli

    Using a knife or a pasta cutter, cut the ravioli into squares or desired shape. Press the edges gently with a fork to ensure they are sealed.

Cooking the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface and are tender. Remove with a slotted spoon.

    Prepare the Sauce

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef and cook until browned. Drain excess fat, then stir in marinara sauce. Simmer for 10-15 minutes.

    Serve the Ravioli

    Place cooked ravioli on a plate, spoon the meat or marinara sauce over the top, and serve hot. Garnish with additional Parmesan cheese and fresh basil if desired.
