Prepare the Dough
In a large bowl, combine all-purpose flour, granulated sugar, unsweetened cocoa powder, and salt. Mix well.

Incorporate Butter and Egg
Cut in unsalted butter until the mixture resembles coarse crumbs. Add egg yolk, white wine (or vinegar), and water. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Roll and Cut the Dough
Roll out the dough to 1/8 inch thickness. Cut into 4-inch circles using a pastry cutter.

Fry the Shells
Wrap each circle around a metal cannoli tube, sealing the edges with a little water. Heat oil in a deep pan and fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Filling
In a medium bowl, combine ricotta cheese, powdered sugar, chocolate chips, orange zest, and vanilla extract. Mix until well blended and creamy.

Using a pastry bag or a spoon, fill each cooled cannoli shell with the ricotta filling, ensuring to fill both ends.
Chocolate Drizzle

Melt the Chocolate
In a microwave-safe bowl, combine semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until melted and smooth.

Drizzle the Chocolate
Drizzle the melted chocolate over the filled cannoli using a fork or a piping bag.
