Method

Fried Flounder

  1. 1

    Prepare the Flounder

Rinse the flounder fillets and pat them dry with paper towels. Season both sides with salt and pepper.

  2. 2

    Breading Setup

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with pecan meal.

  3. 3

    Bread the Fish

Dip each fillet in flour, then in the egg, and finally coat with pecan meal. Ensure each piece is well coated.

  4. 4

    Fry the Fish

Heat oil in a large skillet over medium-high heat. Fry the breaded flounder for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Mashed Potatoes

  1. 5

    Cook the Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

  2. 6

    Mash and Season

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.

Haricots Verts

  1. 7

    Prepare the Beans

Trim the ends of the haricots verts and rinse.

  2. 8

    Sauté the Haricots Verts

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add the haricots verts and cook until tender-crisp, about 5-7 minutes. Season with salt and pepper.

Citrus Honey Butter

  1. 9

    Make the Butter

In a bowl, beat the butter until creamy. Add honey, orange zest, lemon zest, and salt. Mix until well combined.
