Method
Fried Flounder

Prepare the Flounder
Rinse the flounder fillets and pat them dry with paper towels. Season both sides with salt and pepper.

Breading Setup
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with pecan meal.

Bread the Fish
Dip each fillet in flour, then in the egg, and finally coat with pecan meal. Ensure each piece is well coated.

Fry the Fish
Heat oil in a large skillet over medium-high heat. Fry the breaded flounder for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Potatoes
Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Mash and Season
Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.

Trim the ends of the haricots verts and rinse.
