Cooking the Short Ribs

    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Season the beef short ribs generously with salt and black pepper.

    Sear the Ribs

    In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 8-10 minutes.

    Sauté Aromatics

    Remove the ribs from the pot. Add chopped onion and minced garlic to the pot, sautéing until softened, about 3-4 minutes.

    Make the Glaze

    Add the beef broth, Cheerwine soda, soy sauce, brown sugar, and apple cider vinegar to the pot. Stir well to combine.

    Braise the Ribs

    Return the short ribs to the pot, cover, and transfer to the oven. Braise for about 3 hours, or until tender.

Assembling the Dish

    Prep the Buns

    Once the ribs are cooked, remove them from the pot and let them rest for a few minutes. Meanwhile, toast the brioche buns if desired.

    Build the Sandwich

    Shred the short ribs and place a generous portion on the bottom half of each brioche bun. Top with arugula and onion straws.

    Add Sauce and Serve

    Spread horseradish cream on the top half of the bun, close the sandwich, and serve with a side of coleslaw.
