Preparation of Fried Green Tomatoes

    Prepare the Tomatoes

    Slice the green tomatoes into 1/2-inch thick slices, and sprinkle with salt and black pepper.

    Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten eggs mixed with buttermilk, and one with cornmeal.

    Dredge the Tomatoes

    Coat each tomato slice first in flour, then dip in the egg mixture, and finally coat with cornmeal.

    Fry the Tomatoes

    Heat oil in a large skillet over medium-high heat. Fry the breaded tomato slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

    In a saucepan, bring water to a boil. Stir in grits and salt. Reduce heat to low and cook until thickened, about 20 minutes.

    In a medium saucepan, combine chopped tomatoes, diced onion, brown sugar, apple cider vinegar, ginger, and salt. Simmer for about 30 minutes until thickened.

Assembly

    On a plate, serve a generous scoop of cheddar grits topped with fried green tomatoes. Add a dollop of tomato chutney and sprinkle with goat cheese. Drizzle with balsamic glaze to taste.
