Prepare the Fish
In a bowl, mix flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in cold beer or sparkling water until the batter is smooth. Pat fish fillets dry, then dip in batter.

Fry the Fish
Heat vegetable oil in a deep skillet over medium-high heat. Fry the battered fish fillets in batches for about 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.

Make the Pineapple Salsa
In a mixing bowl, combine diced pineapple, red onion, cilantro, and lime juice. Mix well and set aside.

Prepare the Chipotle Crèma
In another bowl, mix sour cream and chopped chipotle peppers in adobo sauce until well combined. Adjust seasoning if necessary.

Assemble the Tacos
Warm flour tortillas and layer with shredded cabbage, fried fish, pineapple salsa, and drizzle with chipotle crèma. Serve with tortilla chips on the side.
