Preparation Instructions

  1. 1

    Prepare the Haricots Verts

Wash the haricots verts under cold running water. Trim the ends of the beans by cutting off the stem end.

  2. 2

    Blanch the Beans

Bring a large pot of salted water to a boil. Add the haricots verts and blanch for 2-3 minutes until they are bright green and tender-crisp. Drain and immediately transfer them to a bowl of ice water to stop the cooking process.

  3. 3

    Sauté with Garlic

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.

  4. 4

    Combine and Season

Add the blanched haricots verts to the skillet and toss to coat in the garlic oil. Squeeze the lemon juice over the beans, and season with salt and black pepper. Sauté for an additional 2-3 minutes.

  5. 5

    Optional Almonds

If using, add the sliced or slivered almonds to the skillet and toss everything together for another minute until almonds are lightly toasted.

  6. 6

    Serve

Transfer the haricots verts to a serving dish and serve warm as a side dish.
