    Prepare the Couscous

    In a medium saucepan, bring 1 1/2 cups of water to a boil. Add the pearled couscous and a pinch of salt. Reduce heat to low, cover, and simmer for about 10 minutes or until water is absorbed. Fluff with a fork and set aside.

    Grill the Vegetables

    In a large bowl, toss the mixed vegetables with olive oil, salt, and pepper. Preheat a grill or grill pan over medium-high heat. Grill the vegetables for 5-7 minutes, turning occasionally, until tender and slightly charred. Remove from grill and set aside.

    Grill the Salmon

    Season the salmon fillets with lemon juice, salt, and pepper. Place the salmon on the grill, skin-side down. Grill for about 4-5 minutes on each side for medium doneness, or until the salmon flakes easily with a fork. Remove from heat.

    Serve

    On a plate, layer the pearled couscous, topped with grilled vegetables, and place the grilled salmon on top. Drizzle with additional lemon juice if desired.
