Fried Green Tomato BLT Directions

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.

    Dredge the Tomatoes

    Set up a dredging station with three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with cornmeal. Dip each tomato slice first in the flour, then in the egg, and finally in the cornmeal to coat.

    Fry the Tomatoes

    Heat oil in a large skillet over medium heat. Fry the coated tomato slices in batches until golden brown, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

    Cook the Bacon

    In another skillet, cook the bacon until crispy. Drain on paper towels.

    Toast the Bread

    Toast the sourdough slices until golden brown.

    Assemble the BLT

    Spread sun-dried tomato pesto on one side of each toasted sourdough slice. Layer with lettuce, fried green tomatoes, bacon, and goat cheese. Top with another slice of bread, pesto side down.
