    Prepare the Calamari

    Rinse the calamari rings under cold water and pat dry with paper towels. Set aside.

    Make the Coating

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Toss the calamari rings in the flour mixture until well coated.

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Prepare the Glaze

    In a small bowl, mix together honey, sriracha, and lime juice to create the citrus chili glaze.

    Serve

    Plate the fried calamari and top with pickled peppers and crumbled feta cheese. Drizzle the citrus chili glaze over the top and serve immediately.
