Add Garlic and Deglaze
Add the minced garlic and cook for an additional 1-2 minutes. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes.

Add Broth and Spices
Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

Prepare the Bread
While the soup is simmering, preheat the oven to 375°F (190°C). Place the French bread slices on a baking sheet and toast them in the oven for about 10 minutes, until crispy.

Serve the Soup
Remove the bay leaf from the soup. Ladle the hot soup into bowls, place a slice of toasted French bread on top of each bowl, and sprinkle the shredded Provolone cheese over the bread.

Melt the Cheese
Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Serve immediately.
