Cannoli Shells

Make the Dough
In a mixing bowl, combine all-purpose flour, granulated sugar, cocoa powder, salt, and cinnamon. Mix well.

Incorporate Butter
Add the unsalted butter to the dry ingredients. Use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.

Add Egg Yolk and Liquid
Stir in the egg yolk, white wine (or vinegar), and water. Mix until the dough comes together.

Knead the Dough
Transfer the dough to a floured surface and knead until smooth, about 5-7 minutes. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut the Dough
After resting, roll out the dough until it's very thin. Cut into circles using a 4-inch round cutter.

Shape the Shells
Wrap each circle around a cannoli tube, sealing the edges with a little water.

Fry the Shells
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the wrapped shells until golden brown, about 2-3 minutes. Remove and cool on a wire rack.

In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.

Fold in Chocolate Chips
Gently fold in the mini chocolate chips into the ricotta mixture.

Fill the Shells
Once the cannoli shells have cooled, use a piping bag to fill each shell with the ricotta filling.

Sprinkle the filled cannoli with powdered sugar and additional mini chocolate chips as desired before serving.
