Method
Preparing the Pasta
Cook the Fiori Pasta
In a large pot of boiling salted water, add the fiori pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
Drain the Pasta
Once the pasta is cooked, reserve 1 cup of the pasta water, then drain the pasta in a colander and set aside.
Making the Mushroom Cream Sauce
Sauté the Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the mixed wild mushrooms and cook for about 5-7 minutes, stirring occasionally, until they are softened and golden brown.
Add the Cream and Seasonings
Reduce the heat to low and stir in the heavy cream, smoked honey, porcini mushroom powder, salt, and black pepper. Let the mixture simmer for about 5 minutes until it thickens slightly, stirring occasionally.
Combine Pasta and Sauce
Add the drained fiori pasta to the skillet with the mushroom cream sauce. Toss to coat the pasta evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Add Fresh Herbs and Parmesan
Stir in the chopped fresh parsley and grated Parmesan cheese, mixing well to combine. Adjust seasoning with more salt and pepper if needed.
