Method

Prep Smoked Pork Shoulder

    Prepare the Spice Rub

    In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub this mixture generously all over the pork shoulder.

    Marinate the Pork

    Place the seasoned pork shoulder in a large bowl. Pour apple cider vinegar over the pork, cover, and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Pork

    Place the marinated pork shoulder in the smoker, adding the soaked wood chips. Smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C). The pork should be tender and easily shredded.

Prepare Crostini

    Slice the Baguette

    Preheat your grill or grill pan over medium heat. Slice the baguette into 1/2 inch thick slices.

    Grill the Bread

    Brush each slice with olive oil. Grill the slices for about 2-3 minutes on each side until they are golden and crispy.

Assemble the Crostini

    Shred the Pork

    Once the pork is done smoking, remove it from the smoker and let it rest for about 30 minutes. Then, shred the pork using two forks.

    Top the Crostini

    Spread a generous spoonful of fresh ricotta cheese onto each grilled crostini. Top with shredded smoked pork, a few pieces of pickled red onions, and a sprinkle of chopped chives.

    Arrange the crostini on a serving platter and serve immediately.
