Prepare the Scallops
Pat the sea scallops dry with paper towels. This helps in achieving a good sear.

Season the Scallops
Sprinkle salt and black pepper on both sides of the scallops.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

For the Risotto

Cook the Bacon
In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pot.

Toast the Rice
Add the Arborio rice to the pot and toast for about 1-2 minutes, stirring frequently.

Add Broth Gradually
Begin adding the chicken broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue until the rice is creamy and al dente, about 18-20 minutes.

Stir in Remaining Ingredients
Once the rice is cooked, stir in the corn kernels, mascarpone cheese, Parmesan cheese, butter, salt, pepper, and the crispy bacon. Mix until creamy.

Garnish and Serve
Garnish with fresh parsley before serving beside the seared scallops.
