Method

Prepare the Meat Sauce

  1. 1

    Cook the Pancetta

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced pancetta and sauté until crispy, about 5 minutes.

  2. 2

    Brown the Meats

Add the ground beef, ground pork, and Italian sausage to the pot. Cook until browned, breaking it up with a spoon, about 10 minutes. Drain excess fat if necessary.

  3. 3

    Add Vegetables

Stir in the chopped onion, minced garlic, and sliced red bell pepper. Cook until the vegetables are tender, about 5 minutes.

  4. 4

    Add Liquids

Pour in the red wine, allowing it to reduce slightly, then add the crushed tomatoes, salt, pepper, and sugar. Stir well and simmer for 20 minutes.

Cook the Seafood

  1. 5

    Sauté the Seafood

In a separate pan, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the shrimp and scallops, cooking for about 3-4 minutes until they are just opaque. Add the lobster meat and cook for another 1-2 minutes.

  2. 6

    Combine with Sauce

Once the seafood is cooked, add it to the meat sauce. Stir in the crushed red pepper flakes, fresh basil, and parsley. Cook for another 5 minutes to meld the flavors.

Cook the Pasta

  1. 7

    Boil the Pasta

In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Drain and reserve a cup of pasta water.

  2. 8

    Combine Pasta and Sauce

Toss the cooked pasta with the seafood meat sauce, adding reserved pasta water as needed to reach desired consistency.

Serve

  1. 9

    Plate and Garnish

Serve the Seafood Fra Diavolo hot, garnished with additional fresh parsley and basil if desired.
