Start by cleaning the Royal Red shrimp. Remove the shells and devein them. Chop the shrimp into bite-sized pieces and place them in a bowl.

Pour the citrus marinade over the shrimp and mix gently. Cover the bowl and let it marinate in the refrigerator for about 15-20 minutes, allowing the shrimp to 'cook' in the acid.

While the shrimp is marinating, peel and thinly slice the cucumber. Chop the mint leaves coarsely.
