    Start by cleaning the Royal Red shrimp. Remove the shells and devein them. Chop the shrimp into bite-sized pieces and place them in a bowl.

    In a separate bowl, combine the lime juice, finely chopped jalapeño (remove seeds for less heat), and finely sliced shallot. Mix well to create a marinade.
