Mousse Cake Directions

    Prepare the Crust

    In a bowl, mix the graham cracker crumbs, melted butter, sugar, and cocoa powder until well combined. Press the mixture into the bottom of a springform pan to form a crust. Refrigerate for 30 minutes to set.

    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin over cold water and let it sit for about 5 minutes to bloom.

    Melt the Gelatin

    Once bloomed, heat the gelatin mixture gently in the microwave or on the stove until it is fully dissolved. Allow to cool slightly.

    Prepare Mousse Layers

    In separate bowls, soften each flavor of ice cream (vanilla, chocolate, raspberry, and coffee) at room temperature for about 10 minutes. Once softened, fold in the melted gelatin into each flavor until smooth.

    Layer the Mousse

    Spread the vanilla mousse over the prepared crust, followed by the chocolate mousse, then the raspberry mousse, and finally the coffee mousse. Smooth the top of each layer with a spatula.

    Chill

    Cover the cake with plastic wrap and refrigerate for at least 4 hours, or until set.

    Serve

    Once set, carefully remove the sides of the springform pan. Slice the mousse cake and serve chilled. Enjoy!
