    In a large pot, heat the lobster oil over medium heat. Add the chopped onion, celery, and diced jalapeño. Sauté until the vegetables are soft and translucent, about 5-7 minutes.

    Stir in the minced garlic and sauté for an additional minute until fragrant.

    Incorporate Crawfish and Stock

    Add the crawfish tails to the pot and stir well. Pour in the chicken stock, and add the bay leaves. Bring the mixture to a gentle simmer.

    Season the Bisque

    Season with salt, black pepper, and cayenne pepper to taste. Let the bisque simmer for 20-25 minutes, allowing the flavors to meld.
