Prepare the Bone Marrow
Preheat your oven to 450°F (230°C). Place the bone marrow bones upright on a baking sheet. Drizzle with olive oil and sprinkle with sea salt.

Roast the Bones
Roast the bones in the preheated oven for about 15-20 minutes, or until the marrow is bubbly and begins to pull away from the bone.

Prepare the Herb Mixture
While the bones are roasting, combine the fresh herbs and citrus zest in a small bowl. Set aside.

Warm the Demi-Glace
In a small saucepan, gently warm the beef demi-glace over low heat until heated through. Do not boil.

Toast the Ciabatta
Slice the ciabatta loaf in half, and toast it in the oven or on a grill until golden brown.

Assemble and Serve
Once the bones are done, remove them from the oven. Top the roasted marrow with the herb mixture and serve with the warm demi-glace and toasted ciabatta on the side.
