    Prepare the Kale

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add the kale to the skillet, sprinkle with salt and black pepper, and sauté for 5-7 minutes until the kale is wilted and tender. Remove from the skillet and keep warm.

    Cook the Flounder

    In the same skillet, add the remaining tablespoon of olive oil. Season the flounder fillets with salt and pepper on both sides.

    Place the fillets in the skillet and cook for 3-4 minutes on each side until they are golden brown and cooked through.

    Add Montpellier Butter

    Once the flounder is cooked, add the Montpellier butter and lemon juice to the skillet. Allow the butter to melt and baste the fillets with the sauce for about 1 minute.

    Serve the flounder on a plate alongside the sautéed kale and drizzle with the melted butter sauce.
