Prepare the Pork Loin

Preheat your grill to medium-high heat. In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and pepper. Rub this mixture all over the pork loin and let it marinate for at least 30 minutes.

Prepare the Boniato

Peel and cube the boniato. Boil in salted water for about 15 minutes or until tender. Drain and mash with a bit of olive oil and salt to taste.

Grill the Pork Loin

Place the marinated pork loin on the grill. Cook for about 20-25 minutes, turning occasionally, until it reaches an internal temperature of 145°F (63°C). Let it rest for 5-10 minutes before slicing.

Grill the King Trumpet Mushrooms

While the pork is grilling, slice the king trumpet mushrooms and toss them in olive oil, salt, and pepper. Grill them for about 5-7 minutes until tender and slightly charred.

Serve

Slice the pork loin and serve alongside the mashed boniato and grilled king trumpet mushrooms. Drizzle with fresh black truffle or truffle oil for added flavor.
