Prepare the Rabbit

Season the rabbit pieces with salt and black pepper. Ensure they are evenly coated.

Sear the Rabbit

In a large skillet, heat olive oil over medium-high heat. Add the rabbit pieces and sear them until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.

Sauté Aromatics

In the same skillet, add minced garlic and chopped rosemary. Sauté for about 1-2 minutes until fragrant.

Deglaze and Simmer

Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

Cook the Rabbit

Return the rabbit pieces to the skillet. Cover and let it simmer on low heat for about 45 minutes, or until the rabbit is tender.

Add Cheese

In the last 5 minutes of cooking, sprinkle the grated Piave Vecchio cheese over the rabbit and cover until melted.

Serve

Serve hot, garnished with additional freshly ground black pepper, if desired.
