Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C).
Prepare the Chicken
Pat the chicken dry with paper towels. Season generously inside and out with salt and black pepper. Stuff the cavity with garlic cloves, lemon halves, and fresh thyme.
Roasting
Roast the Chicken
Place the chicken breast-side up in a roasting pan. Melt the butter in a saucepan over medium heat and cook until it turns golden brown and has a nutty aroma. Pour the brown butter over the chicken.
Cook
Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices halfway through cooking.
Resting & Serving
Rest the Chicken
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Serve
Carve the chicken and drizzle with the brown butter jus. Garnish with fresh parsley before serving.
